How do you sublet your apartment? (w/a strict Co-op Board)?

I live in a NYC studio & work out of town during the week & plan to sublet Mon-Fri. How do you receive payments? PayPal? Checks? What references do I ask for? Should I ask for a deposit? How do I get person in w/o doormen telling the Board about sublet?
